Do you tend to drive lower miles & hit 7 years before you hit 100k miles? If so, then the high-temperature climate means you should not ignore the 7-year spec.
Or... when the owner's manual says 60k miles for "severe service (high temperatures)", does it ALSO give a shorter time vs 7 years?

No, replace at 105k miles is fine.

Just a side comment, Honda eliminated the 7-Year requirement for timing belt replacement sometime in the Gen-7 Accord timeframe. My 2001 Gen-6 V6 Accord called for 7-Years or 105,000 miles, whichever came first, my 2006 3G TL calls for 105,000 miles, regardless of time.
