Your plan will technically work, but there are much better options that are more likely to make you happy.

The LOC you linked doesn't have an auto turn-on remote output so you'll have sub noise problems with the current choice. I recommend one with a remote output to control the sub amp. I prefer this one:
Navone Engineering Inc. » N-RHL2 2 Channel, 50 Watt per channel, Line Output Converter

You amp selection is small and won't give you satisfactory output power. You're better off buying a used amp if your budget is that tight. Boss doesn't make good products in that price range. I've seen the Boss AR4000D make a clean 1kW at 1 ohm. Rockville has a few budget friendly amps that make usable power. We saw Boss Armor Series and Rockville amps used in a budget-friendly SPL challenge with some success (though none of us would run them daily). If you found a used amp from Rockford Fosgate, Alpine, JL Audio, Boston Acoustics, MTX, Crossfire, Memphis, Massive Audio, Kenwood, HiFonics, etc., you would get a better product for a good price, even if the amp was from the late 90's.

The wiring kit needs to be sized for the amp. 8awg is good to 60A of fusing, 4awg is good for 150A of fusing. Scosche, Stinger, and Streetwires all make decent amp kits.

Dang, so the amp i was gonna get is complete trash? haha.

Seems like theres a lot of good amp choices out there, im wondering what would be a decent amp, something thats not too hardcore, but something that is in between trash and top tier?

Seeing as how you need a 2 ohm stable mono load, that limits your options to either monoblock amps (one channel) or a few 2 channel amps that can be bridged into 2 ohm (Boston Acoustics has some GT series). You only need a solid 500-600W RMS @ 2ohm rated amp (CEA compliant or similar). Ignore any max or peak ratings.

Alpine MRD-Mxxx or MRV-Mxxx series are good and widely available.
