Changing steering wheel
I have picked up a nice leather wrapped OEM honda steering wheel off ebay in great condition. I want to replace the crappy spongy steering wheel. I have the shop manual so I'll just follow instructions but just wanted to hear any pointers from those with experience. Is a puller always needed? After unplugging the airbag, will I be OK as long as I leave the key off as far as setting an airbag fault?

There is a procedure for properly removing the air bag and installing. Disconnect the battery. Unplug the air bag connector. Put the red connector on the air bag side of the connector.
If you get an SRS code later, we can tell you how to clear it. I had this happen when I was doing work on the passenger side of the glove box.
I don't have any pointers on removing the steering wheel. I have never done that on my car. I would have a puller ready, because you may need it. I think most parts stores will rent them to you. They are free, because they refund your money when you return the part.

There is a red plastic plug next to the electrical connection for the air bag. That red connector is not connected to anything.
After you unplug the airbag, plug that connector into the airbag side of the connection.

Finally changed out steering wheel. SRS models require a steering puller, available for free rent at Autozones. Non-SRS does not according to the manual. I was confused by the jumper plug as I thought it would have been plugged into the ABS harness, not the airbag. Curious why the airbag would need a jumper, maybe as a preventative or safety measure against static or shorts?

Yes, I think that jumper is to prevent static from setting off the airbag in your face.
