I remember I did this when I put my 1st set of struts on ever. I just don't remember what I did wrong. I wanna say there is a washer that sits on the bottom side of the strut housing that does not allow the rubber to pop out like that. Try and find a diagram for a strut assembly and see if any parts are missing.

EDIT* I think I know what’s wrong. That gold-ish metal piece (the cyl lookin piece) that is under the rubber should be on the underside holding the bigger piece of rubber from letting it pop out like that. But I still wanna say there is a washer that hold it in place

What kind of car? There's parts drawing on the net, but you'll have to know what year/model/etc.

Replacing Honda Front Struts - YouTube

Ok I was right there is a washer that stops the rubber from coming through the top. At 3:09 you can see what I mean. They guy prob installed them wrong and didn’t put the washer on the bottom

yes that washer goes on the bottom. You will see on the rod that comes out of the strut gets bigger as it goes toward the bottom. That washer will stop the rubber from shooting out the top like what happen to you.
Watch that vid you will see what I mean.
