As noted, for normal driving, a header will make you slower. For what you are looking to do, the exhaust will really only be for the sound. Don't get piping larger than 2.25". Only the piping really matters here, for you.

Than don't expect any large gains. Parts you should consider are and upgraded B-pipe or cat-back with 2.25" piping (the stock one has a small pipe inside the exhaust and causes restriction that is unnecessary .... for sound attenuation), lightened pulleys if made .... perhaps a Stage 1 or 2 NA camshaft if you or a buddy can install it. ..... and that's about it.
You'd be better served to focus your efforts on handling/suspension or general maintenance to keep it alive.

There are also smaller power gains from removing the A/C system and power steering, even if you only remove the belts and not the actual parts. Weight reduction is the cheapest mod since it's free.
