19 inch rims

So im looking at 235/35/19 then right? Tirerack.com tells me 215/35-19. Isn't that too thin?

depends, use the miata.net tire calc to compare the stock size to the size you want to get and that will tell you whats too big or small...

Your post interested me until you got to that part. That's where i would disagree. I think 19's look great on a 6th gen and up.
Of course beauty is in the eye of the beholder, for me form should follow function, not the other way around.

Aesthetic considerations aside, all the other points I raise are just as valid however the wheels / rims look.

Most importantly, form should never detract from function, that is just absurd...
