cooling system enhancements

Could we use the cooler thermostat and fan switch?

as long as it fits you could use it, if you really want the engine to be cold you could remove your thermostat completely.

I'm more interested in the fan switch, also i do want the engine to warm up, it just seems that this would start cooling sooner. I don't think it would have any adverse effects.

I don't think it would cause any issues except your heater won't be as warm.
