Probably a fine leak that evaporates and does not accumulate.

Suggest having a cooling system pressurized leak test to identify the leak.

It is possible the leak is a cylinder head gasket, which will show up as declining pressure during the leak test but no observed coolant drip or leak. On restart, you may get an initial miss until coolant is cleared from combustion chamber. White smoke (steam) is another dead tell-tale for failed cylinder head gasket.

good luck
