Most likely a carb problem. Check automatic choke is releasing (choke plate opening) as engine warms. If plate stays closed, the choke actuator is faulty (spring I think?).
Less likely is failed throttle cut that is closing (spring-closed) due to a faulty solenoid or circuit. The throttle idle position is held in place by a solenoid. If solenoid or driving circuit fails, the cut will not hold throttle plate in idle position and engine will starve for air (engine will stop w/o throttle held open manually).
good luck

Will it do the same while sitting still and warm? Pull the top of the air cleaner, remove the air filter and the two 10mm nuts on the screen over the carb. Crank it up and look down the throat of the carb...do you see "gas" dripping?
Then pull the remain two 10mm nuts from the top center of the valve cover (holding the air cleaner). Three vac hoses that connect to the lower air cleaner housing (two on the right/pass side, one on the left/drivers side-as you lift it you will see them), look at the carb fuel level sight glass on the left/drivers side, what is it reading?

You'll need to give some feedback on the items suggested before we can go further....can you smell gas when it shuts off....
I do have two of that gen carb models for reference if needed. Good luck
