When changing the pads, did you lube the caliper slide-pins?
How about the pads themselves wedging tightly in the caliper-bracket? This can cause them to not release.
How about brake pedal-height adjustment? Maybe the master-cylinder piston doesn't move back to the proper position, opening up the vent to the reservoir. When the calipers (& fluid) heat up, the fluid is trapped so as it expands it applies the brakes.
Another thing that's admittedly kinda unusual...
I've heard of cases where the rubber brake hose deteriorates inside, with a little flap of rubber acting like a "check-valve" of sorts. Then when the caliper & fluid heats up, the fluid cannot expand back into the reservoir so that causes the brake to apply itself.
