Safe wheels and tires for this ride would be 215/35/18 and thats a fact forsure...

Ive been wanting to get new wheels/tires too... I follow pretty much everything except for the offset... What is meant by that?

lower it about 1.5-1.8 and run some 17's with 45 series tires.
