Shop said that the head was cracked. replaced head w/rebuilt one, replaced timing belt, water pump.
Got the car back, now there is water in the oil again...., ANY IDEAS?

I would take the car back to the mechanic that did the work. Water + oil usually means a bad head-gasket. Was the rebuilt head milled so it was perfectly flat?
Maybe the coolant system wasn't flushed out, so it is residual oil? Another less likely possibility is a crack inside the engine block.

OK, a 2005 4-cyl doesn't have a timing belt (has a chain) so that's where my V-6 comment came from...
Anyway, I guess I'd want to know how they ruled out a cracked block? A warped head would cause a new headgasket to leak, so was the "new" head milled flat? Top of the block not flat? Right now I can't think of other places for the oil & water to get together.
I imagine the shop should have done some work to rule out those things before spending your money on a head, so you could ask them about that.
A leaking waterpump would leak OUT (onto the ground) not into the oil. I hope it was all cleaned out thoroughly, so this isn't leftover oil from before the head-replacement.
