Could be a faulty temperature sending unit. There is a sensor with a single wire going into it under the distributor. Check that as well.
I'm at school at the moment or i would give your numbers to look for while testing it.

Well this is where is gets intersting.....is the car really overheating or is the gauge wrong.....have a thermo or can you rent one (sorry, not even sure if you can)? Thermo A should close at ~194*

check the thermostat that controls the fan. I had the same problem on my 94 honda lx. Car would overheat and both fans would only come on when the ac was put on. Turns out the brand new thermostat was not making up. Unplug the harness going to it. Start the car, when the needle start to rise to overheat, take a metal paper clip and jump the contacts together. If the fan kicks on, your thermostat is bad.
